Southern Fried Chicken

  • 6-8 Chicken pieces (thighs, drumsticks & wings - roughly the same size))
  • 125g plain flour
  • 35g coarse cornmeal
  • half a teaspoon baking powder
  • 1 heaped teaspoon paprika
  • salt and pepper to season
  • 1 medium egg
  • 65ml milk
  • 100ml vegetable oil for frying
  • Method

    Preheat the oven to 180*c

    Weigh all of the dry ingredients together into a mixing bowl and mix well.

    In a seperate bowl, beat the egg together with the milk.

    Dip each piece of the chicken into the egg mixture and then into the flour mixture and set aside on a plate ready to fry.

    To fry:

    Heat the oil in a deep heavy based frying pan. It should be about 2cm deep.

    Add the chicken to the pan and shallow fry for a few minutes on each side until golden.

    Keep turning and browning until crispy and golden all over.

    Remove from the frying pan into an ovenproof dish or baking tray.

    Bake in the oven for 30 minutes or until the juices run clear when the tip of a sharp knife is inserted into the flesh.
