Herb Crusted Salmon
Preheat the oven to 200°C/400°F/Gas Mark 6
Butter a large oven proof dish and place the fish in the bottom. Skin side down.
Place the breadcrumbs in a mixing bowl and add the finely chopped herbs. (you can blitz these together in a food processor if you have one) Add the melted butter and the grated rind and lemon juice. Mix well. Season with a little salt and pepper.
Spoon the crust over the fish, lightly pressing it down in an even layer.
Bake in the oven for approx 20 minutes or until the fish is cooked.
