Cranberry and Orange Muffins
Preheat oven to 180c/Gas 7
Sieve the flour, baking powder and bicarbonate of soda into a large mixing bowl.
Add the sugar, cinnamon, cranberries and orange rind.
Make a well in the middle of the flour and add the butter, eggs and orange juice.
Mix well, adding milk to mix to a sticky batter.
Spoon into 12 muffin cases and bake in the oven for 20-25 minutes.
Remove from the tin and leave to cool on a wire rack.
